
If you need a summer dip that requires basically no effort, meet my Smoky Tomato Burrata Dip. Burrata and tomatoes are obviously a perfect combination in approximately every single context, but this is basically caprese’s louder, more snackable cousin.
The tomatoes are completely raw, which means this whole thing comes together in about five minutes (!). The only cooking you’re doing here is sizzling some paprika-infused olive oil with oregano until you get these little crispy, fried oregano bits, then pouring that very intensely flavored oil all over the tomatoes and letting them soak it up.
And then there’s the burrata. The burrata really shines here because it becomes this mild, cool, creamy element against all of that intense tomato flavor. The tomatoes kind of melt into the burrata and suddenly you have this creamy, punchy, deeply flavorful dip that you can scoop up with bread, crackers, or chips. It is so good. Like, life-changingly good.
If there is ever a time to make this, it’s now, while the tomatoes are peak summer delicious, whether that means a random weeknight, a backyard bbq, or as part of the Labor Day weekend spread.

Ingredients you’ll need
- 8 ounces cherry tomatoes or globe tomatoes
- 3 garlic cloves
- 2 sprigs oregano
- 1 teaspoon smoked paprika
- 1 teaspoon sweet paprika
- 1/4 teaspoon red pepper flakes, omit if you don’t love heat
- 1/4 cup extra-virgin olive oil
- Diamond Crystal kosher salt
- 1 teaspoon white wine vinegar
- 8 ounces burrata, ideally in two 4-ounce balls
- 7-8 fresh basil leaves
- Assorted chips, crackers, or bread for serving

Ingredient substitutions
This recipe is really flexible, and nearly every ingredient is adaptable. Here are some substitution suggestions:
- Cherry tomatoes: Any small, ripe, in-season tomato variety, such as globe, grape, or even sungolds, will work.
- Garlic cloves: Swap for 1 teaspoon of garlic powder, or you can omit
- Extra-virgin olive oil: Swap for avocado oil, grapeseed oil, or really any oil you like!
- Red pepper flakes: Swap for 1/4 teaspoon of aleppo pepper or cayenne pepper, or you can omit.
- White wine vinegar: Can be swapped with lemon juice
- Burrata: Feel free to swap it for mozzarella for a true caprese vibe

How to make tomato burrata dip
This dip is truly so quick and easy to make, and comes together in three simple steps: prep the tomatoes and garlic, simmer the infused oil, and plate. Here’s how to make it:
1. Prep the tomatoes and garlic
Halve the cherry tomatoes, or thinly slice the globe tomatoes. Add them to a heat-safe bowl. Grate in the 3 garlic cloves.
2. Make the paprika-infused oil
To a medium pan, add oregano, smoked paprika, sweet paprika, red pepper flakes, and extra-virgin olive oil. Place this over medium heat and bring to a simmer for 30-60 seconds, until the oregano is fried and crisp.
Pour this over the tomatoes. Season with salt and white wine vinegar. Mix, taste and season as preferred. As you mix, the oregano leaves will fall off the stems, so be sure to remove the stems.
3. Serve!
To plate, tear up the burrata and layer it across a large plate. Spoon the tomatoes on top. Tear the basil leaves over top and serve immediately.

Serving suggestions
There are tons of ways to serve this dip, but personally, I love to pair it with a smattering of other snackable things, mostly crunchy stuff, to scoop up a bit of everything for a perfect bite. Here are a few things I love to serve alongside it:
- Fresh bread like focaccia or a crusty baguette
- Thin, crisp crackers like crostini, seed crackers, or anything else hearty
- Assorted chips

This was the best thing I’ve put in my face all summer and my new favorite way to enjoy summer tomatoes. I cooked the garlic with the herbs because I have a hard time with so much raw garlic. This was a winning combination with smoked paprika and oregano!!
